I know you said your hubby is tired of chicken, but I have to say, besides beer can chicken, this is the moistest chicken I've ever made.

Buy a whole chicken, salt it inside and out .. refrigerate for 24 hours.

Next day, twine the legs and tuck the wings.

Salt and pepper the cavity again, then stuff it with one cut up lemon and two split in half garlic heads.

Baste it with four tblsp. melted butter and season with salt and pepper

Surround it with cut up carrots, potatoes, onion.

Bake 425 degrees for 1 1/2 hours!

Delicious !!!

* 1-Iguana
* 2-onions
* 1-tablespoon of salt
* 6-8-carrots
* 1-tablespoon of celantro
* 1 small ball of recardo
* 1-cup vinegar
* 1-lime
* 1-sweet pepper
* 1-tablespoon of black pepper
* 1/2-cabbage
* 2-cloves of garlic
* 1-can of diced tomato
* coconut oil

Skin and clean iguana, then wash it in a mixture of vinegar and lime. After that, mix all seasonings and spices together in a bowl and rub them into the meat. Leave the rubbed meat for half an hour. Pour coconut oil in a pot, just to cover the bottom and place it on the fire.

When the oil is hot, put in the iguana meat, then cook it for another half an hour, turning a few times and adding a bit of water if needed. During that time slice the carrots, tomatoes and cabbage. Add them to the meat and cook for another half an hour. Serve with rice and beans.

Looks good except that I don't know what recardo is.

Fried Guinea Pig (Ayacucho-style)

1 guinea pig, de-haired, gutted, and cleaned

1/2 c. flour

1/4 - 1/2 t. ground cumin

salt and black pepper to taste

1/2 c. oil

Pat dry the skin of the guinea pig and rub in the cumin, salt, and pepper. Preheat oil. Dust the carcass with the flour and place it on its back in the oil, turning to cook both sides. Alternately, the guinea pig can be cut and fried in quarters.

Serve with boiled potato or boiled manioc root, and a salad of cut tomatoes and slivered onions bathed in lime juice and a bit of salt. Have cold beer on hand.

Fry up hamburger meat (sprinkle with sugar - sounds gross just do it) set aside;
scramble 2 eggs - set aside;
Boil Ramen noodles (it's quick and easy - and looks impressive)drain and set aside'
Julienne a carrot, snow peas, onion (any other veggie);
In your wok (you know you have one somewhere), add the meat and veggies, "stir fry" in olive oil (sesame oil if you have it); add ramen noodles and drizzle some soy sauce (kikkoman NOT La Choy), sprinkle with more sugar (lightly) add salt and pepper add eggs.
THis is a meal in itself; you can use any type of meat (even bacon) use bamboo shoots, beansprouts, waterchestnuts etc.
At Wegmans, you can experiment with different rice noodles - but for an easy at home meal - I like the ramen noodles.

I made a pork lion in the crock pot yesterday with salt potato's and carrots..it was yummy.
Tonight is Goulash with salad and Italian bread!!
