I am trying to find something for dinner. The hubby is sick of chicken, and I don't like steak. Anyone have any ideas?

Schnitzel !

Pork filets breaded and fried. Serve with mashed potatoes and green beans

Or Bangers and Mash

Fry up some sweet sausage, warm up a can of brown gravy.
Fry up some onions with the sausage put gravy over both

Pork tenderloin with red creamer potatoes, and asparagus. This is the recipe I am using for tonight: http://allrecipes.com/Recipe/Grecian-Pork-Tenderloin/Detail.aspx

I love fresh asparagus in the spring I could eat it every day. Thanks for the idea I haven`t done a nice tenderloin in a while, I like to slow grill them.

I need dinner ideas every night! I get home so late I am always recipe surfing for something creative that's quick and easy. I love different pastas - so I have been switching it up with pasta and vegies lately. I made Orzo, added small cubes of zuccini, sundried tomatoes and artichokes (chopped up and softened with Olive Oil and garlic) added a jar of alfredo sauce...topped with either Shrimp, Scallops, or Clams. This is so fast and easy to make and my boyfriend thinks its 'gourmet' because I used seafood. LOL

I do a lot of salmon because, like you WTL I am home late and STARVING by the time I get there. Salmon cooks very quickly and I can prepare 2 or three servings and have lunch for the next day or two as well. Add a salad and there you have my usual dinner. Sometimes a cooked veggie. I love cooked spinach or other greens as a bed for my salmon....guess what I'm gonna fix for dinner tonight?!

Really Easy Enchiladas

brown and crispy ground meat (drained)
sauteed with onions until carmelized

can tomato soup
can mushroom soup
1/2 jar of salsa

bring to hot and bubbly in sauce pan.

Corn tortillas- dampen paper towels on plate and layer tortillas, another dampened paper towel, layer tortillas, etc. I usually use 15 tortillas. Microwave 1-1 1/2 minutes (until softened)

Spoon beef mixture and fold in each side of tortilla- place fold side down in rectangular pan, snuggly side by side. (two 13x9 pans)

Spoon remaining beef mixture over top, cover with shredded cheddar cheese. bake 15 minutes 350 degrees.

serve with chopped lettuce and cilatro and corn relish. sides of sour cream and guacamole. fast and tasty.
I make this at least once a week.

Catfish. Fresh caught catfish. Baked. Broiled. Fried in fresh butter! ( My all time favorite!) Poached. Ah, the memories.

I am going to try a chicken curry tonight, I'll let you know how it turns out. I will probably do a combination of the two.
