Really Easy Enchiladas
brown and crispy ground meat (drained)
sauteed with onions until carmelized
can tomato soup
can mushroom soup
1/2 jar of salsa
bring to hot and bubbly in sauce pan.
Corn tortillas- dampen paper towels on plate and layer tortillas,another dampened paper towel, layer tortillas, etc. I usually use 15 tortillas. Microwave 1-1 1/2 minutes (until softened)
Spoon beef mixture and fold in each side of tortilla- place fold side down in rectangular pan, snuggly side by side. (two 13x9 pans)
Spoon remaining beef mixture over top, cover with shredded cheddar cheese. bake 15 minutes 350 degrees.
serve with chopped lettuce and cilatro and corn relish. sides of sour cream and guacamole. fast and tasty.
