Does anyone have any interesting zucchini recipes? I have it coming out of my ears, we have had it fried and stuffed with sausage, and have frozen some. I would love to try new recipes.

I have made it stuffed with herbed ricotta. This is the link to the recipe that I have used. I put some bread crumbs on top and broil until the top is really crunchy. I like this recipe because you can alter it very easily and put in lots of different ingredients. I excluded the tomato sauce and it was still really good.

The secret ingredient on Iron Chef America last night was Zucchini...

Maybe you could look up some of those recipes on foodtv.com...I have never heard of half of the things they were making..

I can't wait to try them though..

Zucchini Pancakes


1 1/2 pounds zucchini (about 3 large)
1 teaspoon salt
1/4 cup thinly sliced red onion
1 large egg
3/4 cup coarse fresh bread crumbs
Black pepper to taste
Vegetable oil for brushing skillet

Grate zucchini on the largest holes of a grater into a colander and combine well with salt. Let zucchini drain 30 minutes.
Preheat oven to 200 degrees F.

Using hands, squeeze as much liquid from zucchini as possible. In a bowl stir together zucchini, onion, egg, bread crumbs, and pepper to taste until combined well.

Lightly brush a 12-inch non-stick skillet with oil and heat over moderately high heat until hot but not smoking. Drop four 1/8-cup measures of zucchini mixture into skillet and with a spatula flatten into 1/4-inch-thick pancakes. Cook pancakes 2 to 3 minutes on each side, or until golden and cooked through, transferring pancakes to an ovenproof plate. Keep pancakes warm in oven while making more pancakes in same manner.

I make a casserole out of cubed zucchini, 2 cans diced tomatoes, and 8 oz of mozzerella cheese (sometimes add hamburger). Mix all together in 9x13 pan bake for about 45 min @ 350.

i deep fry real thin slices dredged in flour (salt pepper and garlic powder). like eatin' potato chips!

or stir fry with other vegies and add to corkscrew pasta. (white wine sauce or lemon/butter sauce is delicious!)

shake n bake for chicken
1 beaten egg w/ little water
slice squash (either yellow or green)

dip squash in egg mixture then shake in the shake n bake
fry in hot oil will done. drain on paper towels

Pineapple - zucchini bread

INGREDIENTS
4 eggs
1 1/2 cups white sugar
2 teaspoons vanilla extract
1 cup vegetable oil
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1 (8 ounce) can crushed pineapple, drained
2 cups grated zucchini
3 cups all-purpose flour
1 teaspoon salt
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder


DIRECTIONS
Combine flour, baking powder, baking soda, and salt.
In a large bowl, mix oil, eggs, vanilla, sugar, cinnamon, and nutmeg.
Blend in pineapple and zucchini. Stir flour mixture into zucchini mixture. Pour batter into two greased and floured 9 x 5 inch loaf
pans.
Bake at 350 degrees F (175 degrees C) for 1 hour. Cool on wire racks.

Zucchini Relish

10 c. ground zucchini
4 c. ground onion
1 green pepper
1 red pepper (sweet)
Coarsely grind and add:
3 T. salt – cover with water overnight – Rinse twice

Put in large kettle with:
3 ½ c. sugar
1 t. nutmeg
2 t. celery seed
2 ¼ c white vinegar*
1 t. turmeric
2 t. black pepper
1 T. dry mustard
2 T. cornstarch
*mix ¼ cup vinegar with cornstarch and add rest of vinegar –
Combine all ingredients and cook 30 minutes or until thick.
Put in jars and process in canner 15-20 minutes.
Makes 7 pints. This is a sweet relish, good on hamburgers.

Slice the zucchini length wise, place on the grill then brush with your favorite marinade, we used the garlic and herb marinade from Aldi's. It is delicious!!!!

Gemelli pasta with zucchini, asparagus, green onion, canned diced tomatoes, fresh garlic, fresh purple basil and parsley, can of chicken broth and about 1/4 cup olive oil, top with freshly shredded asiago(or whatever you like). It was awesome!!

Slice up zucchini and layer it like lasagna with, onion, garlic, hot sausage, mozzarella and sauce. Bake at 350 till zucchini is done. It was scrumptious!

I did change it alittle. I used green/red/orange/yellow peppers for color, and 1/2 of a red onion.

We Mexicanized it one night. Saute it with a diced pepper add some salsa, when it's done top it with grated Monterey just cover to let it melt. It was so easy and and we where surprised how good it was. Even the picky kid liked it.

I like to take zuchinni, summer squash , green onions

Slice and spray / splash with olive oil. then sprinkle with Good Seasons Itailian salad dressing, and grill.

cube zucchini, add bean sprouts, carrots (large julienned) mushrooms, snow peas, stir fry, add salt, sugar and soy sauce. (I also had a dash of balsamic vinegar). Serve over steamed rice.

or what i do is just cut it up, put it in a pan with some melted butter (not margerine either), let it cook a little then add some garlic powder a little garlic salt (just to give it a little salty taste); haven't tried it with real garlic yet though i'm sure it'll be good or even better than using the powder. my daughter had some of this over at a neighbor's house and she loves it. now she has another veggie besides green beans that she likes. if anyone has some that they want to get rid of, i'll take some. had to buy some the other day for 3/$1. needless to say it's gone already.
