Stage 2 chile recipe
1/2 pound of bacon cut to 1" pieces and fried till color changes - put in slow cooker
1/4 of a white onion - fried in bacon grease from above till translucent - throw in slow cooker
1 1/2 pound 85% ground beef - surface sear in fry pan - throw in slow cooker
1/2 dozen smll red peppers fry and then throw in slow cooker

add to slow cooker 2 cans red kidney beans, 1 can crushed tomato, 1/2tsp dave's caffienated hot sauce.
Stir and cook for 8 hours
1 bowl per six pack (soda or beer)

try throwing in clams next time. pretty good for something a little different.

I wonder if you could make a white clam chili....I'm gonna think on this one...'course it might end up looking like New England Clam Choweder and tasting like spicy white clam sauce...but the idea is intriguing....

any other suggestions are greatly appreciated. I'm adding jalepeno's to mine, served over steamed rice. smothered with cheddar cheese. (Im making rice too for the stuffed peppers).

Spam Spring Chili

Ingredients
- vegetable cooking spray
- 4 cloves garlic minced
- 2 green bell peppers cut into strips
- 1 cup sliced green onions
- 3 CHI-CHI'S® Diced Green Chilies (4-ounce) cans
- 2 jalapeno peppers minced
- 2 teaspoons dried whole oregano
- 2 teaspoons ground cumin
- 2 (15-ounce) cans canellini beans or kidney beans
- 2 (10 3/4-ounce) cans condensed chicken broth undiluted
- 1 SPAM® Less Sodium (12-ounce) can cubed

Servings: 4
Prep Time: 15 minutes
Cook Time: 30 minutes

Directions
In large saucepan coated with cooking spray, saute garlic over medium heat 1 minute. Add green pepper, green onion, chilies, jalapenos, oregano, and cumin; saute 5 minutes. Stir in beans and broth. Bring to a boil. Cover. Reduce heat and simmer 10 minutes. Stir in SPAM™. Simmer 2 minutes.
