Last night I cooked (don't fall over in shock!) and it turned out pretty good. Threw a dozen large cherry tomatoes, some crimini mushrooms, chopped eggplant (1 inch pieces) and red onion slices on a greased baking sheet. Chopped garlic over all of it, olive oil over all of it. Salt, pepper, italian seasoning. Baked it for 45 minutes at maybe 400.
Pulled the veggies, sliced the mushrooms, put everything in a bowl. Added feta, mashed the tomatoes up a bit to create a little of a sauce. Tossed w/ pasta.
Pretty good - especially for me! Ha!
