I shop at Herrema's Big M. The meat is fantastic, like the IGA/Super Duper/ etc. in Seneca Falls used to have. Great prices too.

I have made a cold sesame salmon with spicy sesame shirataki noodles and broccoli and have some blueberry muffins for desert (I know, I know, the muffins don't really go with but I have them and so that's what we're having!). Oh, and watermelon, and a bottle of wine! Should be a nice picnic.

I would skip the...cold sesame salmon with spicy sesame shirataki noodles and broccoli ....and go straight for the WINE!!! then the blueberry muffins

I went kind of crazy tonight and made myself a seafood extravaganza. When I got home from being downtown all morning and noontime I came home and tackled my dishes. Ugh Sigh Grr. But I got through everything, every last dish, glass, silverware, utensil pots&pans. Scrubbed my stove, sink and countertops. Also washed 4 new big oval dinner platters I bought. These are like 15"x8".
That is what inspired my lust for seafood. I had to fill up one of these platters with a meal lol.
I proceeded to dirty 5 pans for 1 meal.
Took out 1/2# of shrimp, the big 16/20 ones so 8 was like 1/2#. Sauteed' them lemon pepper style. Same thing with some scallops I treated myself to. 16 to a pound for $9.99 but I hadn't had scallops in about 2 years. Took 8 of them and slow sauteed' them in like 1/2 teaspoon of canola oil and lots of butter. No spices I wanted to taste the scallops. The oil is used only so the butter doesn't burn, which even at low(er) temps can ruin the dish. Had a 6oz haddock fillet I dipped in beaten egg and rolled in finely crushed frosted flakes and deep fried. The sugar in the frosted flakes makes the fish crust over quickly and turn a beautiful golden brown quickly. You never want to overcook fish. Boiled a couple ears of some butter & sugar sweet corn in pan # 4, and in the oven I baked up 3 store bought jumbo clams casino. I have my air on it's 72 in here so I can run my oven.

5 pans.
1 meal.
Priceless.

I don't know if you have a job "down there" yet, but have you considered working in an established kitchen/restaurant?

Actively seeking same in an upscale place close by. Always wanted my own place, but that's not going to happen. i know my way around a kitchen. No chef school, but I'm good.

I saute them in lemon juice and butter in a double boiler. No burning; those things are useful!

Turkey meatball sub sandwiches!

Oh, and we usually keep oven roasted veggies on hand in the fridge for "whatever". Zucchini, squash, eggplant, tomatoes, onion - whatever is good from the farmers market. Today I warmed up a whole wheat tortilla, smeared a little hummus, added roasted zucchini/tomato/onion, a bit of feta, some raw shredded spinach, and white beans. Lunch.
