It was really good.. and pretty easy too.. hubby is sick of herb roast chicken so I had to come up with a new idea....

Instead of taking the time to pound out everything or slit the chicken breast to "stuff" it with the ham and cheese..

I sprayed a rectangular casserole with some nonstick spray.. then I breaded ( with Italian bread crumbs) one side of a boneless skinless breast ( I get bulk bags of frozen ones and they are HUGE) and layed it in the dish. I put two slices of swiss cheese and 2 thin slices of honey ham on top of that then breaded one side of another breast and put that on top of the ham ( breading side out) I gave the top of them a light spray with the cooking spray.. And put them in the oven at 350 for about 40 minutes. I didn't have to secure them with a toothpick or anything.. Then to serve I cut them in half so there were 4 big servings.. with sugar snap peas, potatoes and salad.. It was a nice change.. The only thing I would have done differently is to maybe add some more spice to the bread crumbs or season the breast on the inside a little.. maybe some salt / pepper. Not too much though because the ham does add some salt.

Well I get mine from an odd little healthfood store called Mrs. Greens...but you can buy them on-line if you dont' have that alternative. The ones I buy are also made with tofu (and this weird wild-yam like root) anyway...they have just a few calories (40 in an 8 oz. serving - which is actually two servings but at that count who cares???) and taste great prepared in a variety of ways. Tonight I sauteed some garlic in a little olive oil and sesame seed oil and then added some sesame seeds, red pepper flakes and a touch of soy sauce tossed in the drained noodles (they come packed in a liquid that you rinse off) and cooked them til they were just about dry. I love that you can't seem to over cook these things. There is a type that is only made from the wild yam (and is supposed to be really GREAT for diabetics...do a google search and you'll see what I mean) but I'm having trouble finding that one locally...and the quantities you have to buy on-line are kind of massive...well 20 bags at one time. The shelf life is good though so I may play around with it or see if I can share the cost with someone. I'll see...good stuff though!

Oriental food markets are a good source for unusual noodles too. There is a type of rice noodle I used to deep fry that puffs up and with a bit of salt is a wonderful treat.

Oriental food markets are a good source but not as easy to find as Health Food stores.

oops...I see you had that covered, Jazz...:D I gotta learn to read it all before I start to respond!

smalltown in Texas...plan once in a while runs to San Antone if you can Oh the shopping! I know there was a Oriental store there on the bus lines by Ft.Sam at one time. Heaven knows if it's still open.
Out on the NW side all kindsa little stores are there too. It's been nearly 20 years since I been there, but I won't forget the fun of shopping.

Yeah but she's in Texas...big difference. Heck, I miss Wegmans in NYstate, sigh. Up here Oriental food markets are even harder to find. Mention Sushi and most folks here kinda go "huh"??
"We fry our seafood, we broil it and we'll even make soup of it...but "sushi"???
It was kinda funny, so I accepted the fried clams...oh yummmieeeee!

I've always said you can't get any better than Campbells Bean & Bacon soup. Not even homemade. It's my 2nd favorite.

LMAO....yep they still wake us up, right on time :P! At least now Gleep doesn't try to steal a beak full of coffee in the morning!
It's part of having cockatiels, they are "fun" in the morning...how they handle thousands of them in a flock in Australia I'm not sure!
