Just trying to eat more natural foods and less processed foods and see if it helps. Mostly vegetables, fruits, natural oils, and butter sparingly - no margerine for me.

I just revert back to my southern roots. When it's hot like this I do as little as possible and wear the coolest clothing possible. No cooking. I also give up and turn the A/C on.

I hate HUMMUS....that stuff is gross. I hate chikpeas in any fashion...but thanks for the other great ideas. Actually whatever I have been doing has been working....I lost 5 lbs.

No sin at all, in my book; it's health food. I'm pretty much eating the paleo diet, and have come to believe that the USDA food pyramid and recommendations are unhealthy. Way too high on carbs, and not enough saturated fat.

Being homemade, I knew exactly what was in it. Nothing that I couldn't spell or pronounce, LOL.

Love the Land o'Lakes butter with olive oil. They are claiming that the saturated fat in butter is better for you than the artificial stuff and transfatty acids in margerine. Of course, that is using the butter in moderation. Control of fat intake is just as important for diabetes as control of sugar intake.

Found it funny that the Olivia magerine made with Olive Oil actually had Canola Oil listed in the ingredients. In fact, every margerine label I have looked at had Canola Oil in it. There seems to be growing concern that Canola Oil is not as healthy as it was originally thought. Basically it is an artificial oil and the high heat used in processing it chemically alters it and causes unhealthy fatty acids. Best to stick with natural oils or even a little saturated fats. No trans fats, hydrogenated or partially hydrogenated fats. That is difficult to do because those are in almost all processed foods.

Homemade popsicles

Any kind of fruit you want, I used blueberries and peaches.

I mashed the peaches, but you can leave it in chunks.

Mix water, lemon juice, and honey. Use as much or as little honey as you like. You could also use some plain yogurt with honey instead of the water.

I put my fruit in and then filled the rest with the water. I used a lot of fruit, but if you want to use less you have to let the popsicle get slushy first, and then mix in your fruit. That way it will not all sink to the bottom of the mold.


Some other combinations that looked yummy were watermelon puree and fresh mint, strawberry banana, and lemon and ginger (I love ginger and think it goes with pretty much any fresh fruit).
