OMG I feel like I'm at TDP..lol

I ate....Shaved ham with colby/jack cheese on rye for breakfast and lunch..a banana for snack..for dinner I had..Healthy Choice..Basil & Tomato Panini..mmmmmm delish and then an apple.

Well, so far today I have consumed:

*2 cups of coffee with splenda & cream (I'm working on the cream thing but SHEESH...milk just doesn't do it)
*1 bowl (1/2 cup dry) hot cereal (high fiber and protein) made with water and extra cinnamon and a bit of splenda...and 1/2 tsp of cream...I could deal with milk here, just didn't have any
*1 salad made with bagged lettuce, leftover shrimp, chopped assorted veggies and a dressing made with artichoke/red pepper stuff and a little of my regular vinegrette because I'm TRYING to cut down on my salad dressing calories...but I HATE bottled dressings especially low-fat ones because they are ALWAYS too sweet!
*1 glass of Crystal Lite Red Grapefruit drink

Aren't ya glad ya asked????

So to continue:

For supper I had roast chicken, couscous, salad and these really lovely roasted peppers filled with sliced tomatoes and garlic and...for dessert chocolate and espresso bavarian.

sorry about that...I'm just REALLY trying hard not to eat when I'm not hungry so...I was full from the rest of the meal so I didn't eat the bavarian...even if it did look incredible!

French toast for brunch.

An apple for a snack

Dinner: Ziti bake:
1 lb. of ziti, cooked, 1 jar pasta sauce + can of stewed tomatoes + browned ground beef and sweet italian sausage, onions & garlic + green peppers + zuchinni + shredded asiago, mozzarella, provalone, cheddar cheeses. Mixed together and baked.

One bowl filled me up, a TON of leftovers.

Spencer, I know this will sound backasswards...but you have to EAT to lose weight...you just have to eat the right foods in the right amounts (no I'm not talking about food combining, just watching your quantities). If you don't eat enough your body doesn't have enough fuel to start the energy(calorie) burn and it goes into survival mode turning every little thing you eat into FAT!

One of the things that's been really really weird for me as I've lost weight - my personal trainer actually UPPED the calories I need to take in to keep losing because my body composition has changed. Lots more muscle. It has not been easy to change my brain on this because it's counter-intuitive. You'd think that if you weigh less you'd need to decrease your caloric intake to lose weight...but as I've become more fit...I actually need more of the right kinds of foods to keep losing...really, really strange!

I am eating exactly what the nutritionist has asked me to!!
I exercise EVERY morning at 5am. I can tell it's working and my daughter said my ass looks smaller whooo-hoooooo..I actually feel lighter..now I am big..don't get me wrong but I feel different for sure!!..I don't even think of smoking hardly at all just once every few days now..
Also a Thanks to Della!! You could give it a whirl too!! \:o

it's a combo of beef broth and tomato juice (or soup) consumed either hot or cold. A very 1950's-1960's sort of thing and it used to have another name but it escapes me at the moment...

Okay...so I had the cereal this morning with 2 cups of coffee with the usual

1/3 cup each blueberries and ff yogurt mixed togethe

Green salad wth sliced turkey, cukes and some leftover chopped veggies...with my own vinegrette

yogurt and blueberries again

and for dinner, garlicky baked chicken with shirataki noodles dressed with a little garlic, green onions, EVOO and anchovies

lots of water all day long

Interesting celery info. Other articles I've read say that one should eat 4 stalks daily, and that the good effect on blood pressure can be obtained from both cooked and raw celery:

Celery's potential for reducing high blood pressure has long been recognized by Chinese medicine practitioners, and Western science researchers may have recently identified one reason why.

Celery contains active compounds called pthalides, which can help relax the muscles around arteries and allow those vessels to dilate. With more space inside the arteries, the blood can flow at a lower pressure. Pthalides also reduce stress hormones, one of whose effects is to cause blood vessels to constrict. When researchers injected 3-n-butyl phthalide derived from celery into laboratory animals, the animals' blood pressure dropped 12 to 14 percent. But the potential helpfulness of this already nourishing food in lowering blood pressure seems likely, and it doesn't hurt that celery ranks as a very good source of potassium and a good source of calcium and magnesium, because increased intake of these minerals has also been associated with reduced blood pressure.

Celery has a reputation among some persons as being a high-sodium vegetable, and blood pressure reduction is usually associated with low-sodium foods. So how do the benefits of phthalides compare with the risks of sodium in celery? There are approximately 100 milligrams of sodium in a full cup of chopped celery—that's about 2 stalk's worth. The U.S. Food and Drug Administration's Daily Value for sodium intake is 2,400 milligrams, the equivalent of about 24 cups, or 48 stalks of celery. Since two stalks of celery only provide about 4% of the sodium DV, most individuals would be able to include 2 or even more stalks of celery in a day's diet while keeping their total sodium intake below the DV by sticking with other low-sodium foods. The exact amount of celery needed to achieve the blood pressure lowering effects found in animals cannot be determined until clinical trials are conducted on humans using the food itself.

• Coarse salt: 1/2 tablespoon
• Ground black pepper: 1/4 tablespoon

• Chopped parsley: 1/2 tablespoon

Traditional sausage casings add that professional appeal to your homemade sausage. Natural casings or collagen which is used for smoking and dried sausage.

Traditional Chitterling "Chitlins" Recipes



Ingredients


5 pounds frozen Chitterlings (thawed)
5 cups water
2 stalk celery with leaves
1 large onions (chopped)
2 bay leaves
1 clove garlic (minced)
1/2 cup vinegar
1 teaspoon salt
1/2 teaspoon black pepper
1 whole peeled potato
1 Lemon cut in half
1 teaspoon pickling spice
(put in tea ball)


Soak chitterlings in cold water for at least 2 hours.

Drain and strip as much fat as possible from each piece.
Wash thoroughly in cold water. Make sure it is entirely free of dirt.

Cut into pieces about 3 inches.

Place the Chitterlings with the peeled Potato and the Lemon
in a pot of hot water. Add all the other ingredients to the pot
and cover. Cook 2 1/2 to 3 hours over medium heat until tender.

Serve with vinegar and hotsauce.

that might have some impact on why I don't eat sausage, hotdogs or kielbasa unless I'm, ummmm, drinking ;\) Sausage only--and most of the time I peel the 'bowels' off, very seldom hotdogs and never kielbasa.

Ya know, as a nurse I have to deal with every single body fluid or function imaginable. There was only one thing that ever really got to me: collecting a sputum sample. Everything else, as unpleasant as it may be, just about had no effect on me. Some smells, yes. But sputum most always made me gag!

Breakfast: Jimmy Dean breakfast bowl
Lunch: Mini-Pizza
Dinner:

Homemade baked rigatoni;
One box rigatonis, cooked & drained, splashed & stirred with olive oil so they do not stick together
Browned and drained 1 pound each ground round and sweet Italian sausage (remove from casing if you can't find loose.)season with salt and pepper
1 medium onion, diced
1 each medium green and red bell pepper, diced
3 cloves garlic, minced
white button mushrooms, quartered
sweat vegetables in olive oil, season with salt and pepper
1 can stewed or diced tomatoes
1 can black olives, drained
1 pound mozzarella cut into 1/2 inch cubes
1 package shredded mozzarella, (save half for topping)
1 pint ricotta cheese
1 jar favorite tomato based pasta sauce.
chopped fresh basil (or dried Italian seasoning)
1 teasp red pepper flakes.

Mix all together in large casserole pan and top with remaining shredded cheese and fresh Parmesan. (I make two and freeze one)

Bake at 350 for 45 minutes or until cheese on top begins to brown.

remove from oven and let sit for 10-15 minutes.
Enjoy, serves a large crowd.

Eat today- overloaded on junk food all day- vendor sent a huge gift basket of goodies- couldn't resist! tried to eat some "normal food" to stave off munchies- beef barley soup and a roll, the basket is still sitting there, teasing me.....

Well....I gacked down a bowl of soup and 2 bites of peanut butter and jelly....1 can orange crush with ice. I cannot keep anything down so little as possible. The orange crush was good though.

Breakfast:
Homemade breakfast sandwich w/ sausage patty, english muffin,
1 fried egg, 1 slice pepper jack cheese.

Snack: 100 calorie Oreo wafer pack, with coffee.

Lunch: 2 slices thin cut lean deli roast beef, lettuce, light mayo on 12 grain bread.

Dinner: small grilled chicken breast, roasted asparagus, (with a splash of olive oil.)

Dessert: no sugar added fudge-cicle.

Around 1400 calories. Too much fat at breakfast though. Going back to Cherrios and 1% milk.

OMG, I don't think I even want to hear that word Z_____ for at least another week or mabe two! I made 2 dozen loaves of bread, blanched and froze 3 dozen quart bags to add to soups, stews this winter and made the dish I posted in the Z_____ thread last week.

You guys need to be eating BULGUR. It's fabulous in place of oatmeal in the morning, with a little fruit and sugar/maple syrup/agave nectar/sweetener of your choice. Or use it in salads like this one:

My dad shot one in Labrador, and one in Quebec; it's the best deer I've had; I liked it even better than elk (Al Morehouse was kind enough to share some of that on occasion). Never had deer I didn't like. Never had caribou, though; tell Josh to get cracking, and send me one with the moose.

I grew up eating Bulgar. We usually had it in a pilaf and it was my absolute FAVORITE thing to eat leftover for breakfast. When I first went out on my own I used to make tons of it just to have the next day for breakfast. I have no idea why I liked it so much better as leftovers but I did....still do \:\)

1 quart of hydrogen peroxide
1/4 cup of baking soda
1 teaspoon of Dawn dish soap

This is the absolute best way to remove skunk smell from your dogs. You may have to repeat it twice. Of course, mine had his nose right up the skunk's butt and really took a good spraying. I was standing right behind the dog and apparently my screams scared the little b@$#@%%^#d off!

Of course, if they are black, they may turn into a redhead. Mine had red highlights for the longest time ;\)

They are black.

I let them air out for a day, and found that one was not really sprayed, although he might have earlier contacted the other dog. I used vinegar and dish soap in a spray bottle on the other, toweled him off, and repeated. He's pretty tolerable now; I don't think he quite caught the full effect, either. Too much for my nose, though!

We tried that receipe on our dogs that got directly sprayed one time a few years ago. It completely takes the odor away.. Our dogs are black but their hair color did not change at all..

Hunan style chicken, vegetables and rice. I have some little green chili`s, I think these things are flammable. If you don`t wash your hands for like 5 minutes after you chop them up, and touch your eyes( or anything else) you`re in for some pain. \:D

The girls and I ate at Buffalo Wild Wings yesterday,my second time there in 2 weeks. The first time our service was excellent,food was great..food was great yesterday too..I had wings and ribs..why I order so much I have no clue..I ate 3 ribs and 3 wings and couldn't finish..BUT the service sucked yesterday..There was 3 tables with customers and 9 dirty tables..*why we couldn't get a booth*.The server forgot to bring the sugar when asked for our coffee..never came back to ask if the meal was ok or if we would like to partake in the *free beverage* refills..and no one bothered to clean the 9 dirty tables while we were there.Debi had to ask the hostess for a take out box herself..Oh and the Manager was to busy watching football in the bar to even notice his dining room was a mess!

Eat Better America? I love that website and I use it ALL the time. I especially love the recipes for baked goods and desserts. The recipes are all great - even if you tweak them they give you good jumping off points for dinner or lunch or whatever. I tend not to use the processed stuff they recommend (i.e. egg white product, low-fat cheese - I use less or no regular cheese instead) but it's one of my go-to sites for dinner when I'm sick of everything in my fridge!

We have a buffalo farm down the road from us. Fresh buffalo, elk, venison and any poultry, bird or foul you could think of. We buy some chicken in the supermarket and fish, but most of the meat we buy is from the local buffalo farm.

A number of restaurants in NH will serve game meats too.

Delicious! And healthy.

They turned out great, but I'd say the yield was 48 not 36. I'd also add garlic, but that's because I think garlic makes everything better. I omitted sherry because didn't have any.

I saw your post this morning and went out and bought the stuff to make these tonight. They sounded so good I had to try it. They turned out really good! And yes I think I probably made around 45. I didn't have sherry and Wegmans didn't have any Chinese cabbage (if you can believe that!) so I made it with regular cabbage. I also added some garlic chili paste to the sauce, yummy!

It's basically just a thin veal cutlet that is breaded and fried. Usually served with a German(of course) potato salad on the side.

FILET MIGNON

1/2 lb. mushrooms
1 lg. tomato
Butter
1 lg. onion
3/4 slices 4 beef tenderloin steaks (filet mignon)
1/2 c. water
2 tbsp. prepared mustard
4 tbsp. capers, drained

Cut 4 thick center slices from tomato. In pan over medium heat with 1 tablespoon butter cook tomatoes until heated through. Remove and reserve. In 2 tablespoons butter cook onion until tender. Remove to bowl.
In same pan with drippings, cook mushrooms and steak over medium-high heat until desired doneness, about 6 minutes for rare. Place 1 steak on each tomato slice; keep warm. Into remaining drippings, stir water, mustard, and capers over medium heat; cook, stirring until mixture thickens. Pour over and around steaks.

Garlic Shrimp Linguine


Ingredients
1 pound uncooked linguine
1 tablespoon butter
3 tablespoons white wine
2 teaspoons grated Parmesan cheese
3 cloves garlic, minced
1 teaspoon chopped fresh parsley
salt and pepper to taste
1 pound medium shrimp, peeled and deveined

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
In a medium saucepan, melt butter over medium low heat; add wine, cheese, garlic, parsley and salt and pepper to taste. Simmer over low heat for 3 to 5 minutes, stirring frequently.
Increase heat to medium high and add shrimp to skillet; cook for about 3 to 4 minutes or until shrimp begins to turn pink. Divide pasta into portions and spoon sauce on top; garnish with Parmesan cheese and fresh parsley, if desired.

Roasted Salmon with Sorrel and Lemon

1 (3-pound) salmon fillet, skin and bones removed
Zest of 2 lemons
8 ounces (about 8 cups) fresh sorrel, plus 1/4 cup finely chopped
1 1/2 teaspoons freshly ground coarse salt
1/2 teaspoon pepper
2 ounces (about 4 cups) fresh pea shoots
2 ounces (about 4 cups) mizuna, or mesclun
1 tablespoon extra-virgin olive oil

Preheat oven to 450 degrees. Place salmon on a rimmed baking sheet, dark side down. Rub top of fillet with lemon zest, chopped sorrel, 1 teaspoon salt, and 1/4 teaspoon pepper.
Transfer to oven, and roast until top is lightly browned and fish is cooked through, 12 to 14 minutes.
Toss fresh sorrel, pea shoots, and mizuna in a bowl with olive oil, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper. Arrange on platter with salmon, and serve.

Szechuan Shrimp linguine (spicy)

1/4 cup szechuan hot n spicy stir fry sauce
1 small can mushrooms
1/2 an onion sliced
1/2 lb. linguine noodles al dente
1 lb. cooked shrimp

In frying pan saute mushrooms and onions in a little butter or oil (your preference)cook noodles during this process. When sauteing done add shrimp cook 2-3 min. then add szechuan sauce, simmer and stir frequently for about 5 min. drain noodles put on plate, by then you can add the sauce and shrimp over noodles. Soy sauce is optional but everything is easy and takes 15 min to prepare. Very spicy also. Not a lot of clean up either.

Scottie, the Greek yogurt has been strained so it's very thick which makes even the non-fat variety rich and creamy in your mouth. Adding some fruit and, in my case, some splenda...though a little honey is just fine, just tops it off wonderful.

But I also like to make a savory sort of cucumber salad...sliced cukes, mint, minced garlic and some salt and pepper...it's just yummy and soooooooooo good for you!

You'll end up with enough cukes for everyone in the neighborhood. I planted 3 plants once and was inundated with them. Vines got 20' long. Had tons of cukes.

Today I made chicken stir fry with green beans, red peppers, brocolli and snow peas seasoned with sesame, ginger and garlic. It rocked.

Doesn't seem like rocket science; just choose recipes with lots of fiber, which we all should do anyway, to help prevent diverticulosis. About half of people over 60 have it, although many are asymptomatic; it's thought to be caused by low-fiber diets:

"Diverticulosis

Increasing the amount of fiber in the diet may reduce symptoms of diverticulosis and prevent complications such as diverticulitis. Fiber keeps stool soft and lowers pressure inside the colon so that bowel contents can move through easily. The American Dietetic Association recommends consuming 20 to 35 grams of fiber each day. The table “What foods have fiber?” shows the amount of fiber in some foods that a person can easily add to the diet.

The doctor may also recommend taking a fiber product such as methylcellulose (Citrucel) or psyllium (Metamucil) one to three times a day. These products are available in powder, pills, or wafers, and provide 2 to 3.5 grams of fiber per dose. Fiber products should be taken with at least 8 ounces of water.

I haven't ate all day but I'm working on chicken cacciatore. Homeade onion soup bread w/ herb cream cheese spread and also a greek bread dipping blend.

I got a box of roasted garlic & red pepper potato soup yesterday at Marshalls for $4 and I'm gonna try that too!

And egg salad for lunch tomorrow.

You go, girl! I'm having bacon for dinner. Sauder's bacon ends, specifically, which are cheap, tasty, and have a high proportion of meat.

I've really relaxed about bacon since learning that fat is not only healthier than carbs, but is health promoting, period, and essential, whereas some make the case that carbs, while ubiquitous, are not even essential. Carrots and cheese are listed here as a good nitrate source, so I'll have shredded carrots with blue cheese dressing.

And a cinnamon banana-nut streussel, because the cinnamon, banana, and the nuts all work to lower blood pressure. And because it is my deepest belief that if there is a Just and Loving God, then he wants me to have streussel. I'm not saying that there is, mind you, but there is, by god, always steussel.

While carbs may not be necessary, they are at least a good source of calories, and since through most of human history calorie sufficiency has been a problem that needed constant solving, we have evolved to find them highly desirable, even in a time when most of us are fat.

Okay...so I'm a little porky and I like streussel. So what? It just means I'm highly evolved.


Too much salt? Often, the real problem is a too-low potassium/sodium ratio.

I should add that vitamin C prevents the formation of nitrosamines from nitrates. For those who won't take vitamin pills, some orange juice or other citrus with the bacon would be a good idea, or some tomato. How about a bacon/baby spinach/tomato on toasted whole wheat, rye, or pumpernickel, with shredded, melted sharp Cheddar? Don't forget the streussel...

Also, don't fry bacon at high temps, which produce more nitrosamines. Bake it, instead; I think my toaster oven bakes at 350 degrees. Tastes great, too, and you don't have to watch over it.

Ahhh, a woman after my own heart. You have 3 of the basic food groups well covered there in one meal. The fat, sugar and caffeine groups lol.

I haven't had a Ho-Ho in like 10 years since my son was young. Problem is if I eat one I eat the whole box. Same goes for bacon I can eat a whole package without batting an eyelash. We part company at the RedBull though, I think that tastes like a$$. I'll sub a can of Coors Original which is another food group, the alcohol group.

Seriously, I've never had one, and probably never will. I like my caffeine in coffee, and if I want something sweet, it's usually chocolate. The cocoa in it is very good for hypertension, too. I also often drink just cocoa in hot milk; no sugar other than the lactose, and I've come to prefer it that way.

RB contains taurine, but milk and eggs are good sources, too. Meat, such as that contained in the tasty and nutritious bacon food group, is also an excellent source.

Hmnnn...I'll have an eggnog with cinnamon with dinner, too. Right now I'm going for a walk though...42 degrees here...

Ditto on eating the whole package of bacon, unless it's Sauder's ends, they are much more substantial than commercial bacon. As for the Ho-Ho's, I just got a 3-pack. ;\)

And we part ways on the beverages. I gave up drinking alcohol quite a few years ago. I wasn't very good at it. Or I was too good at it, depending on how you look at it.

Yes that is great bacon. The only better I've had in the last 20 years was some I got from an Amish or Mennonite guy at the end of Bauer Road in Waterloo when I used to go thirds on a pig w/ some guys I worked with.

It's an excellent recipe. The accompanying article (I got it from the mag, not the link) was excellent and did a great job explaining the ratios and why they worked. It was a test kitchen recipe, so they shared a lot of details about the pancakes that didn't make the cut.

They were very crispy on the outside but fluffy & light inside. I'll make this recipe again. I'd like to try it with some of my AK barley flour but I'm sure the protein levels will affect the texture.

Are they supposed to be crispy? Or was that derived more from your cooking method? What do you cook yours in/on? I have my Moms old 1960's Wear-Ever 14" round flat griddle that rocks for pancakes and french toast. I only need to use a scant bit of butter so things don't stick.

Are they supposed to be crispy? Or was that derived more from your cooking method? What do you cook yours in/on? I have my Moms old 1960's Wear-Ever 14" round flat griddle that rocks for pancakes and french toast. I only need to use a scant bit of butter so things don't stick.


Not crispy like potato chips but there should be a crust. I used a Calphalon skillet.

Only place I can get good stuff here, not bacon per se is when and if I go to the public market Downtown. It's fun going there, a lot of diversity of foods and people lol.

Last night I had brown rice, peas, and corn with salt, garlic powder, curry, black pepper, and bacon lard, instead of butter. Mmnnn! Think I'll do the same tonight, except I'll add the baked bacon ends, too, instead of having them separately. And maybe a small onion, with the 1 cup (raw) of rice.

A tip of the hat to Sauder's brown rice price: $.79/lb.. Compare Uncle Ben's or Minute...a couple of weeks ago I checked one of them (forget which) and it was about $2.00.

Tomorrow or the next day I'm cooking a turkey...I like to lay bacon over the breast for the last part of cooking. LOL, it gives me something to eat while the bird cools a little, as well as flavoring the gravy.

And, at this moment, pumpkin seeds with dried cranberries added, both from Sauder's. Love that place!

They're on sale at Herrema's this week $1.29 for an 8oz package.

I just made some veal saltimbocca for dinner. I bought a package of real thin veal on special about $3 at Herrema's that was cut for making bracciole but I hardly ever eat red sauce. This is something I've learned to make here. It's more Greek than Italian I believe. You sautee`the veal with a little prosciutto (man that's expensive), a sliced portebello mushroom, some escarole I bought for making soup (yes that soup), kalamata olives, some sage all in a sweet marsala wine sauce. Oh butter too of course lol. I plated it with the veal on one side and served the other happenings over a small bed of vermicelli pasta, which is like angel hair really. It was great I think you would like it.

10 minute shrimp FraDiovolo. Super easy. Take about 1/2 lb of shrimp, a couple three pinches of salt that's like a teaspoon full, and crushed red pepper. This is the key use a lot I use 3 big palmfulls which is like 3 tablepoons full. Mix in a bowl and gently pound the spice into the shrimp. Heat a little olive oil on medium high and add about 1/3 of a medium white onion finely chopped. White onions are stronger and better than yellow ones. Cook this about 5 minutes till you can sort of see through them. Add 2 cloves fresh chopped garlic, a teaspoon or oregano, 2 big palmfulls, like 2 tablespoons full of basil and parsley. Fresh is best if you can get it. Add half cup any dry wine I had some sauterne hangin around and that worked just fine. Add a small can of crushed tomatoes and let this cook like 5 minutes until it thickens just a bit. While thats thickening take another small pan with a few drops of olive oil and sautee' the shrimp for like 1-2 minutes a side then add all this to the other pan. Serve over angel hair pasta which cooks in less than 8 minutes.

This is very hot and spicy not for the tame of palate lol.

Well I was off today, and what a day to have off. Went fishing earlier but got skunked. \:\( The river is very cloudy/muddy. I tried spinnerbaits to have noise attraction but no luck.

Was hoping for a nice fresh 3-4 lb. brown trout out of that nice cold water to grill for us with a couple bacon wrapped filet mignons from Aldi. Those are so freaking good $1.89 each, 5oz. cut.

But plan "B" is in effect. The charcoal is lit, and it's 4 filets instead of 2. I made my slammin mac salad, she's bringing garden salad and dessert still a happy ending.

One of my late nights so not a ton of time for cooking. I made oven toasted muffaleta sandwichs. Good stuff very satisfying and simple. For anyone who wants to know how to make them this is it:

I buy small loaves of unsliced italian bread at Herrema's,99 cents.It's like 12" long like a big sub roll really but crustier. The Urban Sun/IGA/ etc /etc used to sell the same thing in Seneca Falls, if they still have a bakery in store I bet you can buy the same thing.
Per sandwich (loaf), which is enough for both of us :
Take 2 big handfulls of calamata olives and at least an equal amount of giardiniera ( Greek pickled vegetables sold in jars everyplace) and chop them all up together. Split your loaf of bread lengthwise and put half of this mixture on both sides of the bread. Layer 4 ounces salami,4 ounces mortadella,4 ounces capicola, sliced mozzarella and provolone cheeses. Place on a baking sheet and bake at 400 for like 5 minutes. Sooooooo good.

Today for breakfast I ate a stale Bologna sub with sharp cheese, lettuce, tomato, onions, ... I scrapped the old Mayo off.

I hit it the sub with lots of ketchup and mustard to cover the rancid mayo taste and like always washed it down with 2 cans of warm Pabst Blue Ribbon.

BuuuuurrrrrrrrP! gooooooooooood eatin'.

I'll get back to everyone later, I'm off to the neighbors hot tub for my weekly bath...their in Florida and boy are they in for a surprise when they get back.

I think this is the last time I'll go for a dip in the hot tub, the water is getting a little brown.

I missed breakfast today, I over slept, I was sick last night.

I think the green crap in my Pabst made me sick in the neighbors hot tub last night.

But away, for lunch today I fried up 2 kielbasa links with Jalapeno peppers,onions, potatoes and garlic.

First I boiled kielbasa in beer for 5 min. to boil the grease out of kielbasa links.

After 5 min pour grease and beer off discard or cool and drink later.

Take boiled kielbasa links, Jalapeno peppers and onions place in frying pan add 2 tablespoons butter lightly salted( you have to be careful of that salt intake) and fry with potatoes and garlic until blackened.

Serve with a ketchup, mustard, hot sauce and warm Pabst Blue Ribbon.

BuuuuuuuuurrrrrrrrrrrrrP good eatin'!!!

GOD, I feel good now, a little hair of the dog.

It was mold city here last night. In honor of St. Patricks day I pulled all the green moldy food out of my fridge. Hmmm I know what this was, that looks sort of familar, eww God what the heck was that?

Seafood combo platter tonight. Haddock/shrimp/scallops w/ fries and cole slaw. I can bring them home for $8 instead of $15.95 menu price. Plus add some extra scallops in there hehe man I love those.These aren't little bay scallops either like you get at lenten dinners at fraternal organizations and such these are the big boys so sweet and succulent mmm. Jumbo shrimp too and fresh haddock. Fresh cut fries and slaw (made by me this morning) wow what a meal you would love it but I doubt you would eat a fried meal right now.

Well I had a great surprize dinner. I was expecting to have to cook tonight. She picked me up and instead of going to my place we went to hers. She had an amazing meal prepared. Bruschetta Chicken (she's Italian lol) and these oven roasted potatoes that were to die for. Salad. She even made homemade tiramisu for dessert. I think she's a keeper.

We're at my place now polishing off a bottle of wine, then are going to take a moonlight walk on the pier. Full moon tonight, and the moon is at perigee the closest it's been to Earth in like 30 years.

Today for breakfast I ate a bowl of Kashia wheat biscuits cereal and pickled artichokes.I need to start thinking healthy foods.

I like my cold cereal warm so I heated it up the biscuits and the artichokes in the Microwave for 60 seconds. Then I poured warm Pabst Blue Ribbon over the biscuits... OH. MY. GOD. Its. To. Die. Bacon and bacon grease, or lard, are all healthy, as are eggs. The nitrates in corned beef lower blood pressure; spinach, for instance, is full of them. Alcohol in moderation, a beer with every meal, for a man, FI, is healthy.

2/3 of a beer for a woman, partly because they're smaller (except in Ovid), partly because they metabolize it differently, thus suffering organ damage at a lower BAC, and partly because...well, never mind...

Easy on the toast/potatoes/carbs, but if you must, make it whole grain, and definitely eat the spuds with skins on.

I had mucho bacon for dinner last night.

I decided to cut out all the halfway steps and get serious about my diet. Today I had lard for breakfast, lunch, and dinner, and I just finished coating my body with it. I coated the dog, too.
We need good meds to properly metabolize it though...probably many of you are not well enough versed in nutrition to realize that. Good health is not anything to be taken for granted.

We wanted something quick and easy tonight so last night I made some potatoe salad with lots of fresh dill to have ready.
Tonight I made buffalo shrimp wraps. 5 minutes or less. Bought 2 of those red tomatoe/garlic wraps. Put 2-3 layers of romaine lettuce in the middle, some diced fresh tomatoes and a little chopped white mushrooms. Then a fairly liberal amount of chunky bleu cheese dressing. Took a small saucepan and melted about 2tbs of butter then added oh I'd say 1/2 cup Franks red hot sauce. This produced a sauce medium hot. Took some shrimp, peeled and deveined style 40-60 count I used 15 for each wrap and just warmed them for 2 minutes in the cooking hot sauce. Spread them out in the middle of the wrap, rolled them up tucking in the ends and wow were they awesome. Cut them in half and served with the potatoe salad in the middle of the plate between the two halves.
She made a chocolate pudding pie in a graham cracker shell with real whipped cream on top for dessert wow was that good!. \:\)

I went fishing in the canal next to the sewer plant yesterday and man handled a 20 pound carp. My God it was the biggest one I caught in years. Got the monster home and skinned, cut the mud vein out of the slimy thing and cut it up into fillets. After the prepping it I soaked it in malt vinegar for two hours. After two hours I removed the fillets from the malt vinegar and drizzled Olive oil over them then rolled them into a seasoning of garlic, red pepper, dill-weed and horseradish. Placed fish fillets on a stainless steel baking tray and cooked until golden brown. Removing fish fillets oven throw the fish fillets away and ate the stainless steel baking tray...its to die for! BuuuuuuurrrP!

I can grill a pretty mean burger on my charcoal grill, and make an awesome over easy egg in lots of butter. I'm going to try this. I have finished steaks with butter before as a lot of good places do so the butter from the egg (I don't skimp on butter) sounds delicious.

I buy that big tub of Chobani, or whatever you spell it, plain greek yogurt. I buy a bag a frozen bag either blueberries or black cherries...then I take the whole bag of frozen fruit, and I throw it in a saucepan and simmer it with a half teaspoon or so of whatever flavor I want-almond extract or vanilla, or whatever. I also add some artificial sweetener.Add a tablespoon of water...let it cook down, I'd say a hard simmer for about ten-twenty minutes (check it). Then, when the fruit is cooled off, I throw it in the fridge, and when I want a good meal, I scoop out about a quarter of the chobani, a quarter of the fruit, and i add a quarter cup of sliced almonds, mix it up (it's hideous) and eat it all with great gusto, cause it tastes great, and healthy, too. try it, you'll like it!

I only started eating sushi a few years ago. I only eat rolls - I'm not that into sashimi, although I'm getting there. I even eat salmon, which I normally really hate. It's milder when it's uncooked. We went for sushi the other night and had smelt - tasted like home!

I don't think I'll ever go full-on sheep's brain eating or anything, but I've gotten into some organ meats while living here. Several of my favorite restaurants are "snout-to-tail" joints, that buy animals whole and use as much of the entire thing as possible. I don't love sweetbreads but I've had a few good ones. I also had a pig's ear cake that was pretty delicious. Living in AK made me slightly more food adventurous, and since Houston has a pretty hopping food scene (and I write for the local paper about food now) I have to dip my toes in now and again.

We agree again; I like most fish, but salmon has always disgusted me, although I've never had it raw.

One reason I like Dryden SureFine is that they always have both beef and chicken liver (not true of every market, although it should be legally required ) . I love either fried with bacon and onion.

Chicken gizzards are tasty cooked the same way, but are tough, unless boiled 1st. Simmering them in the sauce, Italian style, solves that problem. Although I do that at home, I still can't wait for St. Anthony's, where I have everything at least once...

And I could never get into gizzards, although in theory I should love them - they smell great, I just don't like the taste.

I don't love salmon sashimi, but I can eat rolls that use salmon and I've found that I like them more and more. I still prefer tuna, crab, shrimp, or vegetarian over salmon, but sushi is the only way I can eat that particular fish.

That part of living in AK was definitely wasted on me. I am excited to visit my favorite caribou sausage vendor in Anchorage in August, though.

I haven't tried them in a few years, but I never have developed a taste for them. I was hoping to get home for St. A's this year but a family wedding a few weeks after means I am coming home mid-September instead. Oh well, maybe next year.

I'm very excited about our August AK trip b/c we get to hit Anchorage, Girdwood & Fairbanks. In Anchorage I want the reindeer sausage Nazi's goods, in Girdwood I'd like to finally get to the Double Muskie (Uncle Ted's old favorite haunt) but we'll be at a wedding so I'm sure there will be plenty of good grub, and in the 'Banks I want a BLT at my favorite bar (which is going smoke-free, voluntarily - I can't believe it!) and Thai at Lemongrass.

Hard to believe I ever got fat, huh? LOL

My wife wasn't home yesterday so I had the following: English muffin with peanut butter and strawberry jam, 4 pretzel sticks, 2 bite sized peppermint patties, a tupperware container of cold spaghetti, 6oz. blueberry yogurt, a hot and spicy ramen noodle bowl, a baloney sandwich and vanilla ice cream. LOL. What does she think they make dog food out of? It's just people food that is often unfit for people to eat. I don't think much of it is good for dogs, either. I mean, even when it's not bad for him, like wheat or soy are, it's often not digestible, and so is unavailable for his nutrition. Give the dog some canned mackerel and some whole raw eggs, with finely crumbled shell, already! A vitamin pill is always a good idea, too; mine gets a daily.

Mine gets some Diamond brand kibble, too (maybe 1/3 the package directions). I'm using "chicken and rice" formula. $17/20 lbs. No corn, wheat, or soy. Chicken is the 1st ingredient. It's mid-priced, and better than most (better even than some of the more expensive) kibble, but with the fish and egg, I KNOW he's getting some good protein, and no wheat or soy, which aren't any better for him than they are for you or me.

He needs what you do; keep him light on the grains and starches, and concentrate on meat (he'd really appreciate some beef liver, occasionally), eggs, and green, yellow, and red vegetables.

The fish has iodine and taurine, among other things. The egg has vitamins plus all of the amino acids; egg is the most complete protein.

I eat 2 raw eggs every day (as does the dog), and they've made me what I am today...a freakin' anarchist...

However, I think they've made the dog a socialist...he's quite content to just lie around and have somebody else take care of him...

Though the 2 fine ladies already answered to some degree I will also reply. There are variations but scones are a sweet English quickbread USUALLY dropped or cut to look like biscuits. Again there are variations to the shape.That's the way I always had them growing up. My Mum would put orange marmalade on hers I liked just butter, or raspberry jam if we had some. You can buy them in most larger supermarkets now. Not as good as homemade but not bad either. That was breakfast a lot of times in my house at least twice a week. At my grand mums when I stayed over I got kippers too, loved them. Have no idea where she bought them back then. And she would make 3 minute eggs (soft boiled) that I ate out of this little egg cup, still have it. \:\)

Sunday I made Lasagna Rolls and Homemade Garlic Knots

Filling is ground hamburg browned and grease removed, spaghetti sauce, ricotta and parmesan cheese, salt, pepper and spices to taste. Cook lasagna, cool, lay out and spread ricotta cheese on lasagna noodles. Place ample amount of stuffing on end of noodle and roll. Place on cookie sheet, top with Mozzarella cheese and spaghetti sauce and into 300 degree oven to warm and melt cheese.

Garlic Knots are made with my pizza dough recipe with garlic powder, and italian seasoning added. Allow dough to rise and punch down, roll and stretch individual dough pieces, tie in knot, place on cookie sheet and baste with melted butter/garlic. Place in 375 oven for 12 minutes, remove and baste again

Looks nice.
Need some green though a little Italian parsley on top of the lasagna. And some string beans on the side sauteed` in a hint of olive oil and minced garlic until just fork tender.

Made scallops and shrimp with pancetta, roasted red peppers and fresh basil in a cream sauce over vermicelli pasta. Side salad with Italian and crumbly bleu and crusty garlic bread mmmm.

Your side suggestion sounded good however my wife doesn't like vegetable so in turn my daughter THINKS she doesn't like them \:\/ It's a waste just to cook them for myself. I have made them 100 different ways to try and entice them but they refuse to even try them \:\( I wait till summer and buy the veggies fresh from roadside stands and in limited quantity so they don't spoil with just me eating them. I also buy the Veggie steamers at Aldis that have single servings.

I get my fill of veggies when we go out to eat or to friends for dinner. As a child I hated veggies.... now I LOVE them ALL including Lima Beans, Beets, and Brussel Sprouts

Tuesday I fried some bacon, ate it, and then, when my broccoli was almost steamed I dropped it into the bacon lard and stir-coated it, added black pepper and grated sharp Cheddar...Yum! Going to do the same with green beans, except I may use parm.

Today is gonna be yummy. Doing Roasted Chicken with stuffing in the bird and out, gravy, babyred whooped potatoes, and corn. Already have the onion, celery, and carrots for the chicken noodle soup I am making with the carcass.

I am also making 2 pans of baked ziti for my daughters stage crew dress rehearsal. One just sauce and cheese and one Meat with meat sauce, sausage, and cheese

Out of the total cost of one dinner roughly $18 worth of ingredients I get the roast chicken dinner, chicken noodle soup with tuna fish sandwiches dinner, and left over chicken for sandwiches for lunches \:\)

I also made the 2 pans of Ziti. I wanted the flavors to meld overnight before cooking/delivery. Cooking it yesterday and reheating today would of made it too dry IMO

The only chocolate I eat is dark with at least 80% cocoa, but preferably 85% or 90%. I've seen some dark chocolates, like Dove, that still contain sugar as the main ingredient. It didn't list the cocoa content but I'd guess it's the bare minimum as required to be called "dark".

My rule of thumb is if it isn't bitter it's not real "dark".

That's why I like cocoa, as opposed to the adulterated mixes like "Quick"; it's 100% cocoa. With pure cocoa powder, you're not paying for fillers such as milk powder and sugar, so it's the best bang for the buck, chocolate-wise. I can add that stuff myself, if desired.

I've come to enjoy the bitterness of the straight, non-sweetened cocoa, same as I like my black coffee. And, by using half and half, rather than milk, I'm getting less lactose (milk sugar, which milk has quite a bit of), too.

You want the regular stuff (on top), rather than the Dutch-processed, akalized type on the bottom, according to Sisson (more flavanols):

Yesterday I had Corned Beef and Cabbage with Mashed Potatoes dripping with Butter. I'll have it for dinner again on Saturday.

Burn me at the stake.... I am Irish and don't care for corned beef or cooked cabbage. LOL I like McDonalds Shamrock Shakes....does that make up for it??

I had it tonight...but I bought two CB yest, one for later...I love it. I pressure cooked it, then simmered carrots, onions, and cabbage in the liquid.

Had a glass of half and half with it, and ice cream over strawberries for dessert.
